If a person take a longer leave and the substituing employee is configured (and they accepted the role) - will the onboarding and offboarding tasks be redirected to the substitute, same way the attendance approval process is?

When requesting a substitute during an Absence it is not automatically redirected for On- and Offboarding tasks or approval of Attendance.

For On- and Offboarding tasks you will have to add the substitute to the relevant group in Settings > On-/Offboarding > Groups > add the employee to the relevant group.

For Attendance you will have to create a substitute in Settings > Approvals > Attendance > Manage employee filters > create here an employee filter for the employees that will request Attendance to the substitute.

Then go back to Settings > Approvals > Attendance > Add new ruleset:

Regarding on- and offboarding, how should we proceed if the employee the is being substituted has a role in those processes but not as part of the assigned group but simply as a supervisor?

Could you suggest a solution to a situation described above? It seems to be rather standard case for maternity leave, longer sick leave, etc., yet I cannot find a solution to the problem we are facing.

In case this employee will take over the Supervisor tasks of onboarding, in this case you can add this employee temporary as Supervisor of the new joiner. 

This you can do by going to the profile of the new joiner > Personal info tab > Supervisor: Edit:
