I’m building a email action that’s sent on off/onboarding.
I can insert the managers name (format: Firstname Lastname) with the {{supervisor}} tag. But how do I insert other properties of the manager, mainly the email?

At the moment, the email template will read attributes relating to the Onboarding employee and not their Supervisor. It will of course be able to read the {{Supervisor}} attribute, but it won’t then insert other attributes about the Supervisor but rather the employee. Therefore to workaround this issue, I would choose to leave spacing for this information to be entered and to have the email sent manually, so that this information can be entered prior to sending.
