We have created a number of steps in our off boarding process.
I believe the tasks are shown in the stakeholders accounts (tasks section) 7 days prior to the task being due.
At what point does one get an email alert for such a task? Is that only on the day when it is due? Or are there no alerts at all for Offbaording tasks?

You are right, in the Offboarding Workflow, open to-dos are displayed in the Tasks widget on the dashboard of all responsible employees 7 days before the due date. Besides that, the reminder for overdue to-dos will be notified through email daily, from the due date.
