I added all these tokens to a template and eventhough I followed the interviewing scheduling via Personio they don’t show at all? Is this meant to happen? What’s the purpose of the tokens? How do I make them appear to avoid free typing every time?

Your set up appears to be correct except for one Placeholder, {{JOB_NAME}} should be referenced to as {{position_name}}. If an interview has been set up and all the relevant information is available on the candidates profile then the placeholders should be working as expected.
