When an employee applies for time off, they can either request approval or self-approve. How can I stop them from approving leave? Also, how can I stop them from deleting leave days previously taken?

You’ll have to change the access rights within the employee role settings. There you have to make sure that the boxes are only ticket up to “Propose”:
Take out anything within the “Edit” section.
And within the workflows you can define the approval process yourself.
