I would like to know if i can set the notification a few days before the absence, like evey Monday in the morning to give everyone a headup.
Also I would like wo know can we set different updates in different channel?

Unfortunately at the moment it is not possible on Slack to notify of upcoming absences a few days prior. In this case, I would kindly ask that you submit this feedback into our Ideation Area.
In regards to your second question, I am providing you with our helpcenter article on how to update channel settings in Slack to help you with setting up the various updates and in which channels.
