Commenting to see if there's a workaround here too. Currently, we ask employees without a Gmail account to send one to be able to login and take part in pre-onboarding activities.

As I am assuming you have Google SSO enabled but want to send the invitation email to an employee without a Google account, I can say that this is not possible. Unfortunately on Google’s side they do not allow for SSO to be used with a non Google email address I am afraid. In this case, the only workaround as mentioned would be to have the onboarding employee create a Google account to use for their Onboarding process. I understand this is a frustrating limitation, but unfortunately from our side we cannot overcome it due to it being with Googles requirements.
