I am looking to find out if it would be possible to have the ability to copy applicants details and create these as duplicates in other open roles?

unfortunately, there is no functionality to duplicate applications in the recruiting module.
What you can do is to share your suggestion with the Community here in the Ideation area, so your idea will get visible for our Product-Team.
